PASTA ARABIATA

It’s simply our family favourite pasta, it is also one of the quickest and easiest to make. 

Let me show you how;

INGREDIENTS

  • 1 Pack of Pasta
  • 1 Cup of olive oil
  • 1/2 Cup of tomato paste
  • 2 Table spoons of MelbourneChilliCo chilli
  • 5-6 Garlic cloves
  • 1 Good dash of Salt and Pepper

 

INSTRUCTIONS

First you need.. our MelbourneChilliCo Chilli Oil, very important..

Secondly, you need tomato paste, fresh garlic, olive oil, salt, pepper & pasta.. which ever you like, there are no rules don't let them tell you there is. 

 The process;

1. In a large pot bring your water to the boil with a dash of salt.
2. In a separate saucepan add all the ingredients to a COLD pan. Let it sit in there for 5-10 minutes so it infuses with the oil.
3. Once infused turn up the heat to medium for the sauce combine whilst constantly stirring. The tomato paste will remain on the bottom and the oil will become deep red in colour.
4. Once it’s all bubbling nicely take a small spoon and taste your sauce to decide if it needs anything more to be added. Once you are satisfied with the flavours turn the heat off.
5. As your pot of water comes to the boil, add your pasta, let it boil away until al dente.
6. Turn the saucepan heat back on to high heat to warm up your chilli sauce, once warmed up start to add your al dente pasta directly from the boiling water.
7. Mix the pasta and sauce gently and let the sauce and the pasta become one.
8. Add your choice of cheese, serve & enjoy.

Garnish with;
Handful of cheese - your choice. There are no rules but parmesan is the winner for our family.
